Maine Meal Redux
As a child, I enjoyed a plethora of submarine sandwiches, which are called Italian sandwiches in Maine. There was little more exciting than picking up one of these ‘fancy’ (i.e. store bought) sandwiches, a soda, and a bag of salt and vinegar chips before heading off to the lake.
This summer my older son fell in love with these sandwiches too, and as he is on a DIY kick, insisted on making them himself for various family members on multiple excursions. He became quite skilled at it, settling on a combination of extra sharp cheddar, ham, olives, pepper, onion and tomato, and dressing them with the traditional oil and vinegar. It is helpful to have a picnic table available during assembly, but not absolutely necessary.
